Uttapam is an Indian breakfast pan cake item made with rice flour, urad dal batter pan fried on a pan similar to the popular Dosa but a bit thicker and has more vegetables such as green chiles, tomato, onion, capsicum, sweet corn, carrots etc, popular in South India as a breakfast or snack item.

Made with a batter of rice and lentils or dal, the process involves mixing lentils and rice soaked overnight, ground and fermented until it rises. The batter is spread on a hot pan, generally circular, toppings spread on it and patted gently. Oil is dripped around it, flipped when it is golden-brown, oil dripped again, another flip to make sure the second surface is baked too. The Uttapam is then ready to be served and eaten.
