Biryani

Biryani (pronunciation: /bɪr.jaː.ni/), also known as biriyani or biriani, is a mixed rice dish originating from the Indian Subcontinent. It is made with Indian spices, rice, and meat (chicken, beef, goat, pork, fish, or prawn), and sometimes, in addition, eggs and/or vegetables.

Etymology

The word "biryani" is derived from the Persian language, which was used as an official language in different parts of medieval India, by the various Islamic dynasties. One theory is that it originates from "birinj", the Persian word for rice. Another theory is that it is derived from "biryan" or "beriyan" (to fry or roast).

Ingredients

Biryani is typically made with Basmati rice, Indian spices, and meat. The spices and condiments used in biryani may include ghee, nutmeg, mace, pepper, cloves, cardamom, cinnamon, bay leaves, coriander, mint leaves, ginger, onions, and garlic. The premium varieties include saffron. In all biryanis, the main ingredient that accompanies the spices is the chicken or goat meat; special varieties might use beef or fish.

Varieties

There are many types of biryani, each of which has a uniqueness about it. From Kashmir to Kanyakumari, Karachi to Dhaka, biryani has been adapted to local tastes, with different cooking methods and ingredients. Some popular types of biryani include Hyderabadi biryani, Lucknowi biryani, Kolkata biryani, Malabar biryani, Bhatkali biryani, and Sindhi biryani.
