Keto North African Foods[edit]
North African cuisine, with its blend of arab, berber, and mediterranean influences, brings a rich tapestry of flavors and textures. While many traditional north African dishes contain carb-heavy ingredients like couscous and legumes, they can be adapted to fit the keto diet. In this section, we'll delve into the keto-friendly versions of signature north African foods from countries such as morocco, tunisia, algeria, libya, and egypt.
Morocco[edit]
Keto adaptations of this slow-cooked stew may involve omitting dried fruits and tubers, focusing instead on meats like lamb or chicken, and keto-friendly vegetables.
- Keto lamb tagine with olives and lemon: slow-cooked lamb with green olives, preserved lemons, and a mix of spices.
- Harira (without lentils):
A hearty soup traditionally made during ramadan, the keto version omits lentils and focuses on tomatoes, celery, herbs, and spices.
Ingredients:
- 500g lamb, cubed
- 1 cup green olives
- 1 preserved lemon, finely sliced
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- In a tagine or heavy-bottomed pot, heat olive oil and brown the lamb cubes.
- Add garlic, cumin, ginger, salt, and pepper. Stir until fragrant.
- Add enough water to cover the meat. Bring to a simmer and cover.
- Cook on low heat for 1.5 hours.
- Add olives and preserved lemon slices. Cook for another 15 minutes. Serve hot.
