Morocco[edit]

A hearty soup traditionally made during ramadan, the keto version omits lentils and focuses on tomatoes, celery, herbs, and spices.

Ingredients:

  • 500g lamb, cubed
  • 1 cup green olives
  • 1 preserved lemon, finely sliced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  • Add enough water to cover the meat. Bring to a simmer and cover.
  • Cook on low heat for 1.5 hours.
  • Add olives and preserved lemon slices. Cook for another 15 minutes. Serve hot.

Tunisia[edit]
