Homemade coconut bread

Keto Coconut Bread is a low-carb, gluten-free alternative to traditional bread. Made primarily with coconut flour, it's a delicious and healthy choice for those following a ketogenic diet.

Ingredients

  • 1/2 cup coconut flour
  • 5 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp apple cider vinegar (optional, for fluffiness)
  • 2 tbsp erythritol or another keto-friendly sweetener (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs, melted butter, and apple cider vinegar.
  3. In a separate bowl, combine the coconut flour, baking powder, salt, and erythritol (if using).
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into a greased or parchment-lined loaf pan.
  6. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Tips

  • Coconut flour can be quite absorbent, so it's essential not to overmix the batter.
  • You can add in mix-ins like nuts or seeds for added texture and flavor.
  • Store leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for longer shelf life.

These keto bread recipes use almond flour, coconut flour, or flaxseed meal as low-carb alternatives to traditional wheat flour, making them suitable for a ketogenic diet. Enjoy your homemade keto-friendly bread!
