1. Keto Roasted Brussels Sprouts
Ingredients:
- 1 lb Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 2 tablespoons grated Parmesan cheese (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until well coated.
- Spread the Brussels sprouts in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes or until they are tender and browned, stirring once or twice during cooking.
- During the last few minutes of roasting, add minced garlic to the Brussels sprouts.
- If desired, sprinkle grated Parmesan cheese over the Brussels sprouts before serving.

2. Keto Zucchini Noodles (Zoodles)
Ingredients:
- 2-3 medium-sized zucchinis
- Salt to taste
- Olive oil for cooking
Instructions:
- Using a spiralizer, make zucchini noodles (zoodles) from the zucchinis.
- Place the zoodles in a colander, sprinkle with salt, and let them sit for about 15 minutes to release excess moisture.
- Gently squeeze the zoodles to remove as much moisture as possible.
- Heat olive oil in a skillet over medium heat.
- Add the zoodles and sauté for 2-3 minutes until they are tender but still crisp.
- Serve your keto zucchini noodles as a low-carb alternative to pasta with your favorite sauce.
3. Keto Garlic Butter Asparagus
Ingredients:
- 1 lb fresh asparagus spears, trimmed
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- Salt and pepper to taste
- Grated Parmesan cheese for garnish (optional)
Instructions:
- In a large skillet, melt the butter over medium-high heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the trimmed asparagus spears to the skillet and cook for 5-7 minutes, stirring occasionally, until they are tender-crisp.
- Season with salt and pepper to taste.
- If desired, sprinkle with grated Parmesan cheese before serving.

4. Keto Cauliflower Mash
Ingredients:
- 1 medium-sized head of cauliflower, cut into florets
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- Salt and pepper to taste
- Heavy cream or unsweetened almond milk (optional, for creaminess)
Instructions:
- Steam or boil the cauliflower florets until they are very tender.
- Drain the cauliflower and transfer it to a food processor or blender.
- Add unsalted butter, minced garlic, salt, and pepper to the cauliflower.
- Blend until smooth and creamy, adding a splash of heavy cream or unsweetened almond milk if desired.
- Adjust seasoning to taste.
