History
The production of Huangshan Maofeng dates back to the late Qing Dynasty, around the 19th century. Over time, Huangshan Maofeng gained popularity and became one of the most sought-after teas in China.
Cultivation and Processing
Huangshan Maofeng is grown at high altitudes in the Huangshan region, where the climate is cool and misty, providing ideal conditions for tea cultivation. The tea leaves are harvested in early spring, typically around the time of the Qingming Festival. Only the tender buds and the first leaves are picked to ensure the highest quality.
The processing of Huangshan Maofeng involves several steps:
- **Withering**: The freshly picked leaves are spread out to wither and lose some of their moisture.
- **Pan-frying**: The leaves are then pan-fried to halt oxidation and preserve their green color.
- **Rolling**: The leaves are gently rolled to shape them and release their natural juices.
- **Drying**: Finally, the leaves are dried to reduce their moisture content and prepare them for storage.
Characteristics
Huangshan Maofeng is characterized by its slender, slightly twisted leaves covered in fine white hairs, which give it a distinctive appearance. The tea brews to a pale greenish-yellow color with a fresh, floral aroma and a sweet, mellow taste. The flavor is often described as having notes of chestnut and orchid, with a lingering, pleasant aftertaste.
