Low Carb Coconut and Chocolate Pudding[edit]
This is a delicious and easy-to-make keto friendly dessert that combines the rich flavors of chocolate and coconut. It's perfect for those on a low carb diet who still want to enjoy a sweet treat.
Ingredients[edit]
- 1 can (13.5 oz) of full-fat coconut milk
- 1/4 cup of unsweetened cocoa powder
- 1/4 cup of erythritol or other keto-friendly sweetener
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of xanthan gum (optional, for thickening)
- A pinch of salt
- Unsweetened shredded coconut for garnish (optional)
Instructions[edit]
- In a medium saucepan, combine the coconut milk, cocoa powder, erythritol, and salt. Heat over medium heat, stirring constantly, until the mixture is well combined and begins to steam.
- Reduce the heat to low and sprinkle the xanthan gum over the mixture, whisking constantly to avoid lumps. Continue to cook and stir for another 2-3 minutes, until the pudding has thickened.
- Remove from heat and stir in the vanilla extract.
- Pour the pudding into serving dishes and refrigerate for at least 2 hours, or until set.
- Before serving, garnish with shredded coconut if desired.
