Green Onion No Chile Chicken Enchiladas is a delicious and healthy keto friendly recipe. It is a perfect dish for those who are on a ketogenic diet and love Mexican cuisine.
Ingredients[edit]
- 2 cups of shredded chicken
- 1 cup of green onions, chopped
- 1 cup of cheddar cheese, shredded
- 1/2 cup of sour cream
- 1/2 cup of heavy cream
- 1/2 cup of chicken broth
- 2 tablespoons of butter
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 8 low-carb tortillas
Instructions[edit]
- Preheat your oven to 375 degrees Fahrenheit.
- In a large skillet, melt the butter over medium heat. Add the green onions and cook until they are soft.
- Add the shredded chicken, garlic powder, salt, and pepper to the skillet. Stir well to combine.
- In a separate bowl, mix together the sour cream, heavy cream, and chicken broth. Pour this mixture over the chicken and onions in the skillet. Stir well to combine.
- Spoon the chicken mixture onto the low-carb tortillas. Roll up the tortillas and place them in a baking dish.
- Sprinkle the shredded cheddar cheese over the top of the enchiladas.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
