Baingan Bharta (pronunciation: /ˈbaɪŋɡən bɑːrtə/) is a traditional Indian dish made from mashed eggplants that are grilled over charcoal or direct fire. This infuses the dish with a smoky flavor. The smoked and mashed eggplant is then mixed with cooked onions, tomatoes, garlic, ginger, and various spices.

The term "Baingan Bharta" is derived from two Hindi words: "Baingan" meaning eggplant and "Bharta" meaning mashed.
