Stuffed Poblano Peppers

Stuffed poblano peppers is a delicious and nutritious keto friendly recipe. This dish is packed with flavors and is perfect for those who are on a ketogenic diet.

Ingredients

• 4 large Poblano peppers
• 1 lb Ground beef
• 1 cup Cheddar cheese, shredded
• 1/2 cup Onion, chopped
• 2 cloves Garlic, minced
• 1 tsp Cumin
• 1 tsp Chili powder
• Salt and pepper to taste
• 1/2 cup Sour cream (optional)
• Fresh Cilantro for garnish (optional)

Instructions

1. Preheat your oven to 375°F (190°C).
2. Cut the poblano peppers in half lengthwise and remove the seeds and membranes.
3. In a large skillet, cook the ground beef and onion over medium heat until the beef is no longer pink and the onion is tender.
4. Add the garlic, cumin, chili powder, salt, and pepper to the skillet and cook for another minute.
5. Remove the skillet from the heat and stir in the shredded cheddar cheese.
6. Stuff each poblano pepper half with the beef and cheese mixture.
7. Place the stuffed peppers on a baking sheet and bake for 20-25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
8. Serve the stuffed poblano peppers with sour cream and garnish with fresh cilantro, if desired.
