Low Carb Lettuce Enchiladas[edit]
Low Carb Lettuce Enchiladas is a delicious and healthy keto friendly recipe. It is a perfect meal for those who are on a ketogenic diet and are looking for a tasty and satisfying dish.
Ingredients[edit]
- 1 head of Iceberg lettuce
- 1 lb of Ground beef
- 1 cup of Cheddar cheese, shredded
- 1/2 cup of Onion, chopped
- 1/2 cup of Bell pepper, chopped
- 1 can of Enchilada sauce
- 1/2 cup of Sour cream
- Salt and Pepper to taste
Instructions[edit]
- Start by washing the Iceberg lettuce and carefully removing the leaves to use as the enchilada wraps.
- In a large pan, cook the Ground beef until it is browned and fully cooked.
- Add the chopped Onion and Bell pepper to the pan and cook until they are soft.
- Pour the Enchilada sauce into the pan and stir until the beef and vegetables are well coated.
- Season with Salt and Pepper to taste.
- Lay out a lettuce leaf and spoon some of the beef mixture onto it.
- Sprinkle some shredded Cheddar cheese on top of the beef.
- Roll the lettuce leaf up like an enchilada and repeat with the remaining lettuce leaves and beef mixture.
- Serve the enchiladas with a dollop of Sour cream on top.
