Low Carb Broccoli Lemon Parmesan Soup[edit]
This is a delicious and healthy keto friendly recipe for Low Carb Broccoli Lemon Parmesan Soup. It's a perfect dish for those who are on a ketogenic diet and love to enjoy a warm, comforting soup.
Ingredients[edit]
- 2 tablespoons of olive oil
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 cups of broccoli florets
- 4 cups of chicken broth
- Zest and juice of 1 lemon
- 1 cup of Parmesan cheese, grated
- Salt and pepper to taste
Instructions[edit]
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
- Add the broccoli florets to the pot and stir to coat with the oil. Cook for a few minutes until the broccoli starts to soften.
- Pour in the chicken broth, and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the broccoli is tender.
- Use an immersion blender to puree the soup until it's smooth. If you don't have an immersion blender, you can transfer the soup to a regular blender in batches and puree it that way.
- Stir in the lemon zest, lemon juice, and grated Parmesan cheese. Season with salt and pepper to taste.
- Serve the soup hot, with extra Parmesan cheese on top if desired.
