Roasted Pumpkin with Nuts and Manchego Cheese[edit]

This is a delicious and nutritious keto friendly recipe for Roasted Pumpkin with Nuts and Manchego Cheese. It's a perfect dish for those who are on a ketogenic diet and are looking for a tasty and satisfying meal.

  1. Preheat your oven to 200°C (392°F).
  2. Cut the pumpkin into small cubes and place them on a baking tray.
  3. Drizzle the pumpkin with olive oil and season with salt and pepper.
  4. Roast the pumpkin in the oven for about 30 minutes, or until it's soft and slightly caramelized.
  5. While the pumpkin is roasting, toast the mixed nuts in a dry pan over medium heat until they're golden brown.
  6. Once the pumpkin is done, remove it from the oven and sprinkle the toasted nuts and grated manchego cheese on top.
  7. Return the tray to the oven for another 5 minutes, or until the cheese is melted and bubbly.
  8. Serve the roasted pumpkin with nuts and manchego cheese warm.
