Yogurt Chicken Kebabs with Beet Carpaccio is a delicious and healthy keto friendly recipe. It is a perfect blend of protein and vegetables, making it a balanced meal for those following a ketogenic diet.
Ingredients[edit]
- 500g chicken breast, cut into cubes
- 1 cup Greek yogurt
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 large beets, peeled and thinly sliced
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions[edit]
- In a bowl, combine the Greek yogurt, olive oil, garlic powder, cumin, paprika, salt, and pepper. Add the chicken cubes and mix until well coated. Cover and refrigerate for at least 2 hours.
- Preheat your grill or broiler. Thread the chicken cubes onto skewers and grill for about 10 minutes, turning occasionally, until the chicken is cooked through.
- While the chicken is grilling, prepare the beet carpaccio. Arrange the beet slices on a plate, drizzle with olive oil and lemon juice, and season with salt and pepper.
- Serve the chicken kebabs on top of the beet carpaccio, garnished with fresh parsley.
