This is a delicious and healthy keto friendly recipe for a low carb seafood soup served with a side of garlic mayonnaise. This soup is packed with a variety of seafood and a rich, flavorful broth. The garlic mayonnaise adds a creamy, tangy element that complements the seafood perfectly.
Ingredients[edit]
- 1 lb mixed seafood (shrimp, scallops, clams, mussels)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup tomato, chopped
- 4 cups chicken broth
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, for garnish
For the Garlic Mayonnaise[edit]
- 1/2 cup mayonnaise
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions[edit]
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and red bell pepper. Cook until the vegetables are soft.
- Add the tomato, chicken broth, paprika, salt, and pepper. Bring to a boil.
- Add the seafood and cook until the seafood is cooked through, about 5-10 minutes.
- While the soup is cooking, make the garlic mayonnaise. Combine the mayonnaise, garlic, lemon juice, salt, and pepper in a small bowl. Stir until well combined.
- Serve the soup hot, garnished with fresh parsley. Serve the garlic mayonnaise on the side.
