Ingredients[edit]
- 500g chicken breast, cut into bite-sized pieces
- 1 cup cashew nuts
- 2 cups mixed vegetables (like bell peppers, broccoli, and zucchini)
- 2 tablespoons coconut oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions[edit]
- Heat the coconut oil in a large pan over medium heat.
- Add the chicken pieces to the pan and cook until they are browned and cooked through.
- Remove the chicken from the pan and set it aside.
- In the same pan, add the garlic and ginger and cook for a minute until they are fragrant.
- Add the vegetables to the pan and cook until they are tender.
- Return the chicken to the pan and add the cashew nuts.
- In a small bowl, mix together the soy sauce and sesame oil. Pour this over the chicken and vegetables and stir to combine.
- Season with salt and pepper to taste.
- Serve the stir fry hot.
