Keto Thai Fish Curry with Coconut Milk[edit]

This is a delicious and easy-to-make Keto Thai Fish Curry with Coconut Milk. It's a perfect dish for those who are on a ketogenic diet and love Thai cuisine.

  1. Heat the coconut oil in a large pan over medium heat.
  2. Add the onion, garlic, and ginger to the pan and sauté until the onion is translucent.
  3. Stir in the Thai red curry paste and cook for another minute.
  4. Pour in the coconut milk and bring the mixture to a simmer.
  5. Add the fish chunks and red bell pepper to the pan. Cover and cook for about 10 minutes, or until the fish is cooked through.
  6. Stir in the spinach and cook until it wilts.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro before serving.
