Keto Egg Benedict on Avocado is a delicious and healthy breakfast option for those following a Keto diet. This recipe is high in protein and healthy fats, and low in carbs, making it perfect for a keto-friendly meal.
Ingredients[edit]
- 2 Eggs
- 1 Avocado
- 2 slices of Canadian Bacon
- 1 tablespoon of Vinegar
- Salt and pepper to taste
- For the Hollandaise Sauce:
* 2 Egg yolks * 1/2 cup of melted Butter * 1 tablespoon of Lemon Juice * Salt and pepper to taste
Instructions[edit]
- Cut the avocado in half and remove the pit. Set aside.
- In a pan, cook the Canadian bacon until it is browned and crispy. Set aside.
- To poach the eggs, bring a pot of water to a simmer. Add the vinegar. Crack the eggs into a small bowl and gently slide them into the simmering water. Cook for about 4 minutes, then remove with a slotted spoon.
- While the eggs are poaching, make the hollandaise sauce. In a blender, combine the egg yolks, melted butter, lemon juice, salt, and pepper. Blend until smooth and creamy.
- To assemble, place the Canadian bacon on top of the avocado halves. Top with the poached eggs and drizzle with the hollandaise sauce. Season with additional salt and pepper if desired.
