Keto Egg Benedict on Avocado[edit]

Keto Egg Benedict on Avocado is a delicious and healthy breakfast option for those following a Keto diet. This recipe is high in protein and healthy fats, and low in carbs, making it perfect for a keto-friendly meal.

Ingredients[edit]

 * 2 Egg yolks
 * 1/2 cup of melted Butter
 * 1 tablespoon of Lemon Juice
 * Salt and pepper to taste

Instructions[edit]

  1. Cut the avocado in half and remove the pit. Set aside.
  2. In a pan, cook the Canadian bacon until it is browned and crispy. Set aside.
  3. To poach the eggs, bring a pot of water to a simmer. Add the vinegar. Crack the eggs into a small bowl and gently slide them into the simmering water. Cook for about 4 minutes, then remove with a slotted spoon.
  4. While the eggs are poaching, make the hollandaise sauce. In a blender, combine the egg yolks, melted butter, lemon juice, salt, and pepper. Blend until smooth and creamy.
  5. To assemble, place the Canadian bacon on top of the avocado halves. Top with the poached eggs and drizzle with the hollandaise sauce. Season with additional salt and pepper if desired.
