Keto Zucchini Lasagna[edit]
Keto Zucchini Lasagna is a delicious and healthy alternative to traditional lasagna. It's low in carbs, high in protein, and perfect for those following a keto diet.
Ingredients[edit]
- 2 large zucchini
- 1 pound ground beef
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions[edit]
- Preheat your oven to 375 degrees F (190 degrees C).
- Slice the zucchini into thin strips and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.
- Add the ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in the tomato sauce, salt, and pepper. Simmer for about 5 minutes.
- In a separate bowl, combine the ricotta cheese, egg, and half of the parmesan cheese.
- In a baking dish, layer the zucchini, meat sauce, and cheese mixture. Repeat the layers until all ingredients are used, ending with a layer of mozzarella cheese.
- Bake for 25 minutes, or until the cheese is bubbly and golden. Let the lasagna rest for 5 minutes before serving.
