  1. Preheat your oven to 375 degrees F (190 degrees C). Line a 10x15 inch jelly roll pan with parchment paper.
  2. In a large bowl, beat the eggs until they are frothy. Gradually add the erythritol, beating until thick and lemon-colored.
  3. Beat in the cocoa, vanilla, and salt. Spread the batter evenly into the prepared pan.
  4. Bake for 15 minutes, or until the cake springs back when lightly touched. Cool for 5 minutes.
  5. Invert the cake onto a kitchen towel dusted with cocoa. Roll up the cake in the towel, starting with a short end. Cool completely.
  6. In a small saucepan, heat the heavy cream and sugar-free chocolate chips until the chips are melted and the mixture is smooth.
  7. Unroll the cake and spread the filling over the cake. Roll up again and place seam side down on a serving platter. Chill until serving.
