Keto Lemon Baked Chicken Thighs with Cauliflower Mash[edit]
Ingredients[edit]
- Chicken thighs - 4 pieces
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Cauliflower - 1 head, cut into florets
- Butter - 2 tablespoons
- Heavy cream - 1/4 cup
- Parmesan cheese - 1/4 cup, grated
Instructions[edit]
- Preheat your oven to 400 degrees F (200 degrees C).
- In a bowl, mix together the lemon juice, garlic, olive oil, salt, and black pepper. Add the chicken thighs and marinate for at least 30 minutes.
- Place the marinated chicken thighs on a baking sheet and bake for 25-30 minutes, or until the chicken is cooked through.
- While the chicken is baking, steam the cauliflower florets until they are tender.
- In a blender or food processor, blend the steamed cauliflower, butter, heavy cream, and Parmesan cheese until smooth.
- Season the cauliflower mash with salt and black pepper to taste.
- Serve the baked chicken thighs with the cauliflower mash on the side.
