Keto Grilled Pork Skewers with Zoodle Salad is a delicious and healthy meal that is perfect for those following a keto diet. This recipe is easy to prepare and packed with flavor.
Ingredients[edit]
- 500g pork tenderloin, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- Salt and pepper to taste
- 2 medium zucchini, spiralized
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 2 tablespoons lemon juice
- 2 tablespoons fresh basil, chopped
Instructions[edit]
- Preheat grill to medium heat.
- In a large bowl, combine the pork, olive oil, garlic powder, paprika, salt, and pepper. Mix until the pork is well coated.
- Thread the pork onto skewers and grill for 10-12 minutes, turning occasionally, until the pork is cooked through.
- While the pork is grilling, prepare the zoodle salad. In a large bowl, combine the spiralized zucchini, cherry tomatoes, feta cheese, red onion, lemon juice, and fresh basil. Toss until well combined.
- Serve the grilled pork skewers on top of the zoodle salad.
