Keto Chocolate Cake with Peanut Buttercream[edit]
Ingredients[edit]
- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 cup erythritol
- 3 large eggs
- 1/2 cup melted butter
- 1 tsp vanilla extract
- 1/4 cup unsweetened almond milk
For the Peanut Buttercream[edit]
- 1/2 cup unsweetened peanut butter
- 1/4 cup butter
- 1/4 cup powdered erythritol
- 2 tbsp heavy cream
- 1 tsp vanilla extract
Instructions[edit]
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, combine the almond flour, cocoa powder, baking powder, and erythritol.
- In another bowl, whisk together the eggs, melted butter, vanilla extract, and almond milk.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared cake pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the peanut buttercream. In a bowl, beat together the peanut butter, butter, powdered erythritol, heavy cream, and vanilla extract until smooth.
- Once the cake has cooled, spread the peanut buttercream on top.
