- 2 ripe avocados, mashed
- 2 large eggs
- 1/2 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup erythritol or preferred keto sweetener
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- A pinch of salt
- Optional: 1/4 cup dark chocolate chips (keto-friendly)
Instructions[edit]
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the mashed avocados, eggs, and vanilla extract until smooth.
- Add the almond flour, cocoa powder, erythritol, baking soda, and salt to the wet mixture. Mix until well combined.
- If using, fold in the keto-friendly chocolate chips.
- Pour the batter into a greased or parchment-lined 8x8-inch baking dish, spreading it out evenly.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out mostly clean.
- Allow the brownies to cool in the baking dish before cutting into squares and serving.
