Keto Chicken Alfredo Zoodles

Keto Chicken Alfredo Zoodles is a comforting Italian-inspired dish that replaces traditional pasta with zucchini noodles ("zoodles"). This dish provides the creamy richness of Alfredo sauce without the carb-heavy pasta, making it a favorite among keto enthusiasts.

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the sliced chicken breasts and season with salt, black pepper, and red pepper flakes if using. Cook until the chicken is browned and fully cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sauté until fragrant.
  5. Pour in the heavy cream and bring to a simmer. Once simmering, reduce heat to low and whisk in the grated Parmesan cheese until a creamy sauce forms.
  6. Return the cooked chicken to the skillet and mix well with the Alfredo sauce.
  7. Add the spiralized zucchini noodles to the skillet, gently tossing to coat the zoodles in the Alfredo sauce. Cook for an additional 2-3 minutes or just until the zoodles are slightly softened but still have a bite to them.
  8. Serve the dish hot, garnished with fresh parsley.
