Low Carb Shepherd's Pie[edit]
Low Carb Shepherd's Pie is a delicious and healthy alternative to traditional shepherd's pie. This recipe is perfect for those following a keto diet as it is low in carbs and high in protein and healthy fats.
Ingredients[edit]
- 1 lb ground beef
- 1 cup cauliflower florets
- 1/2 cup carrots, diced
- 1/2 cup onions, diced
- 2 cloves garlic, minced
- 1/2 cup beef broth
- 1/2 cup heavy cream
- 1/2 cup cheddar cheese, shredded
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions[edit]
- Preheat your oven to 375 degrees F (190 degrees C).
- In a large skillet, heat the olive oil over medium heat. Add the onions, carrots, and garlic and cook until softened.
- Add the ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in the beef broth and bring to a simmer. Cook for 5-10 minutes, or until the broth has reduced by half.
- While the beef is cooking, steam the cauliflower florets until tender. Mash the cauliflower with the heavy cream until it reaches a smooth consistency. Season with salt and pepper.
- Transfer the beef mixture to a baking dish. Spread the mashed cauliflower over the top of the beef.
- Sprinkle the shredded cheddar cheese over the cauliflower.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Allow the pie to cool for a few minutes before serving.
