Low Carb Chocolate Cake with Easter Eggs[edit]

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line it with parchment paper.
  2. In a medium bowl, combine the almond flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, cream the unsalted butter and erythritol together until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the vanilla extract.
  5. Gradually mix in the almond flour mixture alternately with the almond milk.
  6. Pour the batter into the prepared cake pan.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Melt the dark chocolate and drizzle over the cooled cake. Decorate with sugar-free Easter eggs.
