Keto Chicken Curry Stew[edit]
This is a delicious and hearty Keto friendly recipe for Chicken Curry Stew. It's packed with flavor and will keep you satisfied while sticking to your low-carb diet.
Ingredients[edit]
- 2 lbs Chicken breast, cut into chunks
- 2 tbsp Coconut Oil
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 1 tbsp fresh Ginger, grated
- 2 tbsp Curry Powder
- 1 tsp Turmeric
- 1 can Coconut Milk
- 1 cup Chicken Broth
- 1 cup Cauliflower, chopped
- Salt and Pepper to taste
- Fresh Cilantro for garnish
Instructions[edit]
- Heat the coconut oil in a large pot over medium heat.
- Add the chicken chunks and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the onion, garlic, and ginger. Cook until the onion is translucent.
- Add the curry powder and turmeric, stirring to coat the onion mixture.
- Return the chicken to the pot, add the coconut milk and chicken broth. Bring to a simmer.
- Add the cauliflower, salt, and pepper. Cover and simmer for 20 minutes, or until the cauliflower is tender.
- Serve hot, garnished with fresh cilantro.
