Low Carb Irish Colcannon[edit]

Low Carb Irish Colcannon is a traditional Irish dish that has been modified to fit a keto friendly diet. This dish is a hearty combination of mashed cauliflower instead of potatoes, mixed with kale or cabbage, and onions sautéed in butter. It's a perfect side dish for any meal and is especially popular on St. Patrick's Day.

  1. Steam the cauliflower florets until they are tender.
  2. While the cauliflower is steaming, melt the butter in a large pan over medium heat.
  3. Add the diced onion to the pan and sauté until it is translucent.
  4. Add the minced garlic to the pan and continue to sauté for another minute.
  5. Add the chopped kale or cabbage to the pan and cook until it is wilted.
  6. Once the cauliflower is tender, drain it and return it to the pot.
  7. Add the heavy cream to the pot and use a hand blender to puree the cauliflower until it is smooth.
  8. Mix the sautéed vegetables into the mashed cauliflower and season with salt and pepper.
  9. Garnish with fresh parsley before serving.
