Ingredients[edit]
- 1 lb of shrimp
- 1 tablespoon of olive oil
- 1/2 teaspoon of cayenne pepper
- 1/2 teaspoon of paprika
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- 2 cups of mixed salad greens
- 1/2 cup of cucumber, sliced
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of avocado, diced
- 2 tablespoons of lemon juice
- 2 tablespoons of extra virgin olive oil

- In a bowl, mix the shrimp with olive oil, cayenne pepper, paprika, garlic powder, salt, and pepper.
- Heat a pan over medium heat and cook the shrimp for 2-3 minutes on each side or until they are pink and cooked through.
- In a large bowl, combine the salad greens, cucumber, cherry tomatoes, red onion, and avocado.
- Add the cooked shrimp to the salad.
- In a small bowl, whisk together the lemon juice and extra virgin olive oil. Drizzle this dressing over the salad and toss to combine.
