Low Carb Imperial Rice[edit]
Low Carb Imperial Rice is a delicious and healthy alternative to traditional rice dishes. It's perfect for those following a keto diet as it's low in carbs and high in protein and healthy fats.
Ingredients[edit]
- 1 head of cauliflower, riced
- 2 tablespoons of olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup of chicken broth
- 1/2 cup of heavy cream
- 1 cup of cheddar cheese, shredded
- Salt and pepper to taste
Instructions[edit]
- Start by ricing the cauliflower. You can do this by grating it or using a food processor.
- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic to the pan and sauté until the onion becomes translucent.
- Add the red bell pepper and green bell pepper to the pan and continue to sauté for another 5 minutes.
- Add the riced cauliflower to the pan and stir well to combine with the other ingredients.
- Pour in the chicken broth and bring the mixture to a simmer.
- Reduce the heat to low and cover the pan. Let it cook for about 10 minutes, or until the cauliflower is tender.
- Stir in the heavy cream and cheddar cheese until the cheese is melted and the sauce is creamy.
- Season with salt and pepper to taste.
