Keto Shepherd's Pie is a delicious and healthy alternative to traditional shepherd's pie. It's packed with vegetables and lean protein, and topped with a creamy cauliflower mash instead of the usual potatoes. This recipe is perfect for those following a keto diet.
Ingredients[edit]
- 1 lb ground beef
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onions, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- 1 head cauliflower, cut into florets
- 1/4 cup heavy cream
- 2 tbsp butter
- 1/2 cup cheddar cheese, shredded
Instructions[edit]
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain the fat.
- Add the carrots, celery, onions, and garlic to the skillet. Cook until the vegetables are tender.
- Stir in the beef broth, Worcestershire sauce, salt, and pepper. Simmer for 10 minutes.
- While the beef mixture is simmering, steam the cauliflower until very tender.
- In a blender or food processor, puree the cauliflower with the heavy cream and butter until smooth.
- Spread the beef mixture in a baking dish. Top with the cauliflower puree and sprinkle with the cheddar cheese.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden.
