Soft tortillas is a low carbohydrate / keto friendly food item.

Keto Soft Tortillas are a low-carb, grain-free alternative to traditional wheat or corn tortillas. They are typically made using a combination of almond flour and coconut flour, which provides the right texture and consistency similar to regular tortillas.
Keto Soft Tortillas Recipe[edit]
Ingredients[edit]
- 1 cup almond flour
- ¼ cup coconut flour
- 2 tsp xanthan gum
- 1 tsp baking powder
- 2 eggs, beaten
- 2 tbsp olive oil
- 2 tbsp water (or more as needed)
Preparation[edit]
- In a mixing bowl, combine almond flour, coconut flour, xanthan gum, and baking powder.
- Add in the beaten eggs, olive oil, and water. Mix until the dough forms a cohesive ball. If the dough is too dry, add a bit more water until the desired consistency is achieved.
- Divide the dough into small balls, approximately the size of a golf ball.
- Using a rolling pin, roll out each ball between two sheets of parchment paper until they are thin and round.
- Heat a non-stick skillet over medium heat. Once hot, place a tortilla onto the skillet and cook for 1-2 minutes on each side, or until slightly golden and cooked through.
- Repeat with the remaining dough.
- Store in a sealed container or zip-lock bag to keep them soft.
Serving Suggestions[edit]
- Use as a wrap for taco fillings, Keto Gyros, or other favorite fillings.
- Serve alongside Keto Salsa and Guacamole for a light snack.
