  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the bell peppers, onion, zucchini, and garlic.
  3. Drizzle the vegetables with olive oil, then season with salt, black pepper, and Italian herbs. Toss until the vegetables are evenly coated.
  4. Spread the vegetables out on a large baking sheet. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly browned.
  5. Drizzle the roasted vegetables with balsamic vinegar before serving.
