Parma Cauli Tabbouleh Plate with Feta[edit]

A delicious and healthy keto friendly recipe, the Parma Cauli Tabbouleh Plate with Feta is a perfect meal for those following a low-carb diet.

  1. Preheat your oven to 200°C (180°C fan) mark 6.
  2. Toss the cauliflower florets in the olive oil and spread out on a baking tray. Sprinkle with the Parmesan cheese and season with salt and pepper.
  3. Roast the cauliflower in the oven for 20-25 minutes, or until golden and crispy.
  4. While the cauliflower is roasting, prepare the tabbouleh. In a large bowl, combine the parsley, mint, cherry tomatoes, cucumber, and red onion.
  5. Once the cauliflower is done, let it cool slightly before adding it to the tabbouleh mixture. Toss well to combine.
  6. Top the tabbouleh with the crumbled feta cheese before serving.
