Low Carb Strawberry Shortcake is a delicious, keto-friendly dessert that is perfect for those following a keto diet. This recipe is easy to prepare and is packed with flavor, making it a great choice for a healthy dessert.

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the almond flour, coconut flour, erythritol, and baking powder.
  3. In a separate bowl, whisk together the melted butter, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
  5. Pour the batter into a greased baking dish and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the shortcake is baking, whip the heavy cream until soft peaks form.
  7. Once the shortcake has cooled, slice it in half horizontally. Layer the bottom half with half of the whipped cream and half of the sliced strawberries. Place the top half of the shortcake on top, and layer with the remaining whipped cream and strawberries.
  8. Serve immediately and enjoy!
