Low carb goulash soup
Low carb goulash soup is a hearty and flavorful dish that is perfect for those following a keto diet. This recipe is packed with protein and healthy fats, making it a satisfying meal that will keep you feeling full for hours.
Ingredients[edit]
- 500g of beef, cut into cubes
- 2 onions, chopped
- 2 garlic cloves, minced
- 1 bell pepper, chopped
- 400g of tomatoes, chopped
- 2 tablespoons of paprika
- 1 teaspoon of caraway seeds
- 1 bay leaf
- 1 litre of beef broth
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions[edit]
- Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the onions and garlic. Cook until the onions are translucent.
- Add the bell pepper, tomatoes, paprika, caraway seeds, and bay leaf to the pot. Stir to combine.
- Return the beef to the pot and add the beef broth. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beef is tender.
- Serve the soup hot, garnished with fresh parsley if desired.
