Keto Goat Cheese Mushroom Frittata[edit]
This is a recipe for a delicious and nutritious Keto Goat Cheese Mushroom Frittata. This dish is perfect for those following a keto diet as it is low in carbs and high in fats.
Ingredients[edit]
- 8 large eggs
- 1 cup of goat cheese, crumbled
- 1 cup of mushrooms, sliced
- 1/2 cup of spinach, chopped
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions[edit]
- Preheat your oven to 375 degrees Fahrenheit.
- In a large oven-safe skillet, heat the olive oil over medium heat.
- Add the mushrooms to the skillet and sauté until they are browned and tender.
- Add the spinach to the skillet and cook until it is wilted.
- In a large bowl, whisk the eggs until they are well beaten. Season with salt and pepper.
- Pour the beaten eggs over the vegetables in the skillet.
- Sprinkle the crumbled goat cheese evenly over the top of the eggs.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and the cheese is lightly browned.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
