Keto Dairy-Free Vegetable Pie[edit]
This is a delicious and healthy recipe for a Keto Dairy-Free Vegetable Pie. It's perfect for those following a Keto diet and is also dairy-free, making it suitable for those with dietary restrictions.
Ingredients[edit]
- 1 cauliflower head, cut into florets
- 2 tablespoons coconut oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup spinach, chopped
- 1/2 cup almond flour
- 1/2 cup coconut milk
- 4 eggs
- Salt and pepper to taste
Instructions[edit]
- Preheat your oven to 350 degrees F (175 degrees C).
- Steam the cauliflower florets until tender, then mash them in a bowl.
- Heat the coconut oil in a pan over medium heat. Add the onion, garlic, bell pepper, and zucchini. Cook until the vegetables are tender.
- Add the spinach to the pan and cook until wilted.
- In a separate bowl, combine the almond flour, coconut milk, eggs, salt, and pepper. Mix until well combined.
- Add the cooked vegetables to the bowl with the almond flour mixture. Stir until well combined.
- Pour the mixture into a pie dish. Bake for 30-40 minutes, or until the pie is set and the top is golden brown.
- Let the pie cool for a few minutes before slicing and serving.
