  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Steam the cauliflower florets until tender, then mash them in a bowl.
  3. Heat the coconut oil in a pan over medium heat. Add the onion, garlic, bell pepper, and zucchini. Cook until the vegetables are tender.
  4. Add the spinach to the pan and cook until wilted.
  5. In a separate bowl, combine the almond flour, coconut milk, eggs, salt, and pepper. Mix until well combined.
  6. Add the cooked vegetables to the bowl with the almond flour mixture. Stir until well combined.
  7. Pour the mixture into a pie dish. Bake for 30-40 minutes, or until the pie is set and the top is golden brown.
  8. Let the pie cool for a few minutes before slicing and serving.
