This is a delicious and creamy Macadamia Coconut Keto Custard recipe that is perfect for those following a keto diet. It's rich in healthy fats from the macadamia nuts and coconut milk, and has a smooth, custard-like texture that will satisfy your sweet tooth without kicking you out of ketosis.
Ingredients[edit]
- 1 cup of unsweetened coconut milk
- 1/2 cup of macadamia nuts, crushed
- 4 large eggs
- 1/4 cup of erythritol or other keto-friendly sweetener
- 1 teaspoon of vanilla extract
- A pinch of salt
Instructions[edit]
- Preheat your oven to 325°F (165°C).
- In a medium saucepan, heat the coconut milk and macadamia nuts over medium heat until it begins to simmer. Remove from heat and let it cool for a few minutes.
- In a separate bowl, whisk together the eggs, erythritol, vanilla extract, and salt.
- Slowly pour the egg mixture into the coconut milk and macadamia nuts, stirring constantly.
- Pour the mixture into four ramekins or custard cups.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake for 40-45 minutes, or until the custard is set and a knife inserted in the center comes out clean.
- Let the custard cool before serving. Enjoy!
