Keto Coconut Lime Cupcakes[edit]

Keto Coconut Lime Cupcakes are a delicious, low-carb dessert option that are perfect for those following a Ketogenic diet. They are moist, flavorful, and easy to make.

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine the coconut flour, erythritol, baking powder, and salt.
  3. In a separate bowl, whisk together the melted coconut oil, eggs, coconut milk, lime zest, and lime juice.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
  5. Divide the batter evenly among the cupcake liners and bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  6. While the cupcakes are cooling, make the frosting by beating together the butter, erythritol, lime juice, and lime zest until smooth.
  7. Once the cupcakes are completely cooled, frost them with the lime frosting.
