Keto Deviled Eggs
Keto Avocado Deviled Eggs are a creamy twist to the classic deviled eggs, incorporating the richness of avocado. This dish is not only delicious but also packed with health benefits, making it a favorite among keto enthusiasts.
Ingredients
- 6 large eggs
- 1 ripe avocado, pitted and peeled
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp lime juice
- Salt and pepper, to taste
- Optional: paprika, chives, or cilantro for garnish
Instructions
- Place the eggs in a saucepan and cover with water. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Drain the eggs and place them in a bowl of ice water to cool. Once cooled, peel the eggs.
- Slice each egg in half lengthwise and remove the yolks. Place the yolks in a mixing bowl.
- Add the avocado to the bowl with the egg yolks. Mash the yolks and avocado together until smooth.
- Mix in the mayonnaise, Dijon mustard, and lime juice. Season with salt and pepper.
- Carefully spoon or pipe the mixture back into the egg whites.
- Garnish with paprika, chives, or cilantro, if desired.
