Overview[edit]
Keto Kohlslaw is a crunchy, tangy, and creamy coleslaw, tailored to fit the ketogenic diet. It omits sugar and opts for keto-friendly ingredients while maintaining the traditional taste and texture of classic coleslaw.
Ingredients[edit]
- 4 cups shredded cabbage (a mix of red and green cabbage can be used)
- 1/4 cup grated carrot (optional for those strict about carbs)
- 3/4 cup full-fat mayonnaise
- 2 tbsp apple cider vinegar
- 1 tbsp erythritol or other keto-friendly sweetener
- 1 tsp Dijon mustard
- Salt and pepper to taste
- 1/2 tsp celery seed (optional)
Preparation[edit]
- 1. In a large mixing bowl, combine shredded cabbage and grated carrot.
- 2. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sweetener, Dijon mustard, salt, pepper, and celery seed.
- 3. Pour the dressing over the cabbage mixture and toss well until everything is well-coated.
- 4. Refrigerate for at least an hour before serving to let the flavors meld.
Serving Suggestions[edit]
- Perfect as a side dish for barbecued meats or keto sandwiches.
- Can be used as a topping for keto tacos or wraps.
