A delicious and healthy alternative to traditional tortillas, these Low Carb Zucchini Tortillas are perfect for those following a keto diet.

  1. Preheat your oven to 450 degrees F (232 degrees C) and line a baking sheet with parchment paper.
  2. Grate the zucchini and place it in a clean dish towel. Squeeze out as much liquid as possible.
  3. In a large bowl, combine the drained zucchini, egg, mozzarella, parmesan, almond flour, salt, and pepper. Mix until well combined.
  4. Scoop about a quarter cup of the mixture onto the lined baking sheet and spread it out into a thin circle, about 5 inches in diameter.
  5. Repeat with the remaining mixture, leaving plenty of space between each tortilla.
  6. Bake in the preheated oven for about 15 minutes, or until the edges are golden brown.
  7. Let the tortillas cool on the baking sheet for a few minutes, then carefully peel them off the parchment paper.
  8. Serve warm or store in an airtight container in the refrigerator.
