Keto Carnitas are a flavorful, slow-cooked pork dish that originates from Mexico. The ketogenic version maintains the deep flavors without the typical sugary additives, making it suitable for a low-carb diet.
Ingredients[edit]
- 3 lb pork shoulder or pork butt, cut into 2-inch chunks
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tsp dried oregano
- 1 tsp ground cumin
- 1/2 cup fresh lime juice
- 1/2 cup fresh orange juice (use a low-carb option or omit for stricter keto)
- 2 cups water
- 2 bay leaves
Preparation[edit]
- 1. In a large pot or Dutch oven, combine pork, garlic, salt, pepper, oregano, and cumin. Mix well.
- 2. Add lime juice, orange juice, water, and bay leaves.
- 3. Bring the mixture to a boil. Reduce heat to low, cover, and simmer for 2 hours or until pork is tender.
- 4. Remove pork from the pot and shred using two forks. Discard bay leaves.
- 5. Heat a skillet over medium-high heat. Add shredded pork and cook until crispy and golden-brown.
- 6. Serve with keto-friendly tortillas or over a salad.
Serving Suggestions[edit]
