Keto Carnitas are a flavorful, slow-cooked pork dish that originates from Mexico. The ketogenic version maintains the deep flavors without the typical sugary additives, making it suitable for a low-carb diet.

Ingredients[edit]

  • 3 lb pork shoulder or pork butt, cut into 2-inch chunks
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 cup fresh lime juice
  • 1/2 cup fresh orange juice (use a low-carb option or omit for stricter keto)
  • 2 cups water
  • 2 bay leaves

Preparation[edit]

  • 1. In a large pot or Dutch oven, combine pork, garlic, salt, pepper, oregano, and cumin. Mix well.
  • 2. Add lime juice, orange juice, water, and bay leaves.
  • 3. Bring the mixture to a boil. Reduce heat to low, cover, and simmer for 2 hours or until pork is tender.
  • 4. Remove pork from the pot and shred using two forks. Discard bay leaves.
  • 5. Heat a skillet over medium-high heat. Add shredded pork and cook until crispy and golden-brown.
  • 6. Serve with keto-friendly tortillas or over a salad.
