Keto Meatballs
Keto Cheese-Stuffed Meatballs offer a delightful twist on the classic meatball by incorporating a gooey cheese center. Rich in protein and fats, they're a perfect main or side dish for those on the ketogenic diet.
Ingredients
- 1 lb ground beef or ground pork
- 1/2 cup almond flour
- 1 large egg
- 2 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 1 cup mozzarella cheese, cut into small cubes
- 1/2 cup low-carb marinara sauce (optional)
- Fresh basil or parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the ground meat, almond flour, egg, Italian seasoning, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Take a small amount of the meat mixture and flatten it in the palm of your hand. Place a cube of mozzarella in the center and form the meat around the cheese, rolling it into a ball.
- Place the meatballs in a baking dish or on a lined baking sheet.
- If using marinara sauce, spoon a small amount on top of each meatball.
- Bake in the preheated oven for 20-25 minutes or until meatballs are fully cooked through.
- Garnish with fresh basil or parsley before serving.
Serving Suggestions
Serve these cheese-stuffed meatballs with keto spaghetti squash or drizzle with additional marinara sauce. They're also excellent as appetizers for parties.
