Keto Meatballs

Keto Cheese-Stuffed Meatballs offer a delightful twist on the classic meatball by incorporating a gooey cheese center. Rich in protein and fats, they're a perfect main or side dish for those on the ketogenic diet.

Ingredients[edit]

  • 1 lb ground beef or ground pork
  • 1/2 cup almond flour
  • 1 large egg
  • 2 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 1 cup mozzarella cheese, cut into small cubes
  • 1/2 cup low-carb marinara sauce (optional)
  • Fresh basil or parsley for garnish

Instructions[edit]

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the ground meat, almond flour, egg, Italian seasoning, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Take a small amount of the meat mixture and flatten it in the palm of your hand. Place a cube of mozzarella in the center and form the meat around the cheese, rolling it into a ball.
  4. Place the meatballs in a baking dish or on a lined baking sheet.
  5. If using marinara sauce, spoon a small amount on top of each meatball.
  6. Bake in the preheated oven for 20-25 minutes or until meatballs are fully cooked through.
  7. Garnish with fresh basil or parsley before serving.

Serving Suggestions[edit]

Serve these cheese-stuffed meatballs with keto spaghetti squash or drizzle with additional marinara sauce. They're also excellent as appetizers for parties.
