Types of Chocolate

Chocolate is a popular confectionery product made from cacao beans. It comes in various forms and flavors, each with distinct characteristics. The primary types of chocolate include dark chocolate, milk chocolate, white chocolate, and several specialty varieties such as ruby chocolate and compound chocolate.

Dark Chocolate

Dark chocolate, also known as plain chocolate, contains a high percentage of cocoa solids and cocoa butter, with little to no milk solids. It is known for its rich, intense flavor and is often used in baking and cooking. Dark chocolate is considered to have health benefits due to its high antioxidant content.

Milk Chocolate

Milk chocolate is made with milk solids, which give it a creamier texture and sweeter taste compared to dark chocolate. It is the most popular type of chocolate worldwide and is used in a variety of confectionery products.

White Chocolate

White chocolate is made from cocoa butter, sugar, and milk solids, but it does not contain cocoa solids. This gives it a sweet, creamy flavor and a pale ivory color. It is often used in desserts and confections.

Ruby Chocolate

Ruby chocolate is a relatively new variety, known for its pink color and fruity taste. It is made from specially processed ruby cocoa beans and does not contain any added colors or flavors.

Couverture Chocolate

Couverture chocolate is a high-quality chocolate that contains a higher percentage of cocoa butter, making it ideal for tempering and coating. It is often used by professional chocolatiers for its glossy finish and smooth texture.

Compound Chocolate

Compound chocolate is made with vegetable fats instead of cocoa butter. It is often used as a coating for candy bars and other confections because it does not require tempering.

Cooking Chocolate

Cooking chocolate, also known as baking chocolate, is unsweetened chocolate used primarily in baking. It provides a strong chocolate flavor to baked goods and desserts.
