List of tofu dishes
Tofu, also known as bean curd, is a food prepared by coagulating soy milk and then pressing the resulting curds into solid white blocks of varying softness. It is a traditional component of East Asian and Southeast Asian cuisines. Tofu can be soft, firm, or extra firm. It has a subtle flavor and can be used in savory and sweet dishes. It is often seasoned or marinated to suit the dish and its flavors, and due to its spongy texture, it absorbs flavors well. Asian Cuisine[edit]
Chinese Cuisine[edit]
- Mapo tofu - A popular Chinese dish from Sichuan province. It consists of tofu set in a spicy sauce, typically a thin, oily, and bright red suspension, based on douban (fermented broadbean and chili paste) and douchi (fermented black beans), along with minced meat, traditionally beef.
- Stinky tofu - A form of fermented tofu that has a strong odor. It is usually sold at night markets or roadside stands as a snack or in dedicated restaurants or lunch bars as a dish.
Japanese Cuisine[edit]
- Miso soup - A traditional Japanese soup consisting of a stock called "dashi" into which softened miso paste is mixed. Many ingredients are added depending on regional and seasonal recipes, and personal preference. Tofu is a common ingredient.
- Agedashi tofu - A simple Japanese way to serve hot tofu. Silken (kinugoshi) tofu is cut into cubes, lightly dusted with potato starch or cornstarch and then deep fried until golden brown.
Korean Cuisine[edit]
- Sundubu-jjigae - A hot and spicy jjigae (Korean stew) made with uncurdled dubu (tofu), seafood, vegetables, mushrooms, onion, scallions, and chili powder. The dish is assembled and cooked directly in the serving vessel.

- Tofu scramble - A vegan alternative to scrambled eggs. The tofu is crushed and then fried with spices (often including turmeric, for its strong yellow color) to give it a scrambled egg-like appearance and flavor.
European Cuisine[edit]
- Tofu quiche - A variation of the traditional quiche recipe, where tofu replaces the eggs and cream to create a filling. This dish is often chosen by those following a vegan diet.
