Noodles are a type of staple food made from unleavened dough which is rolled flat and cut, stretched or extruded, into long strips or strings. Noodles can be refrigerated for short-term storage or dried and stored for future use. Noodles are used in a variety of dishes and have been adapted to local tastes in many different regions. This article provides a list of some of the most popular and widely recognized noodle dishes from around the world.
Asian Noodle Dishes
Chinese Noodle Dishes
- Chow Mein - A stir-fried noodle dish that is typically served with meat, onions, celery and occasionally other vegetables.
- Lo Mein - A Chinese dish with egg noodles. It often contains vegetables and some type of meat or seafood, usually beef, chicken, pork, shrimp or wontons.
- Dan Dan Noodles - A spicy Sichuan dish that consists of a spicy sauce containing preserved vegetables, chili oil, Sichuan pepper, minced pork, and scallions served over noodles.
Japanese Noodle Dishes
- Ramen - A Japanese dish with Chinese origins. It consists of Chinese-style wheat noodles served in a meat or fish-based broth, often flavored with soy sauce or miso, and uses toppings such as sliced pork, dried seaweed, and green onions.
- Udon - A type of thick wheat noodle used frequently in Japanese cuisine. It is often served hot as a noodle soup in its simplest form, as kake udon, in a mildly flavoured broth called kakejiru, which is made of dashi, soy sauce, and mirin.
Korean Noodle Dishes
- Japchae - A sweet and savory dish of stir-fried glass noodles and vegetables that is usually served with beef, and flavored with soy sauce, and sweetened with sugar.
- Naengmyeon - A Korean noodle dish of long and thin handmade noodles made from the flour and starch of various ingredients, including buckwheat, potatoes, and sweet potatoes.

Italian Noodle Dishes
- Spaghetti - A long, thin, solid, cylindrical pasta of Italian origin that is a staple food of traditional Italian cuisine.
- Lasagna - A type of wide, flat pasta, possibly one of the oldest types of pasta. Lasagne, or the singular lasagna, commonly refers to a culinary dish made with stacked layers of pasta alternated with sauces and ingredients such as meats, vegetables and cheese, and sometimes topped with melted grated cheese.
